Hooray For Girls Night Out!!!

I had so much fun this weekend. Jody, Tricia, Cicelie, and Leah came to St. George for a fun girls weekend. It was perfect timing. Sam had been out of town since Monday kayaking the Colorado River. It had been such a long busy week. So by Friday I was ready!!! On Friday we went to Bajio and Annie out at Tuachan. (I wasn't a fan of Annie at all). We stayed up late laughing and trying to move a mattress from my storage room to the master. Tricia and I thought it was hillarious but Cic wasn't very impressed! Saturday morning was so much fun. I got to be soccer mom all day. Lexie, Daxton and Max all had soccer games. There is nothing better than watching your kids play sports. I think Leah was ready for Adalyn to be 9 so she could get in there and be the best soccer mom ever. They all played so good and I can't wait for next Saturday! After all the games we were ready for a nice cold swim. So the girls came with us. Sammie had so much fun with Tricia in the pool. Tricia is going to be the most amazing mom! Later that night Leah and I had to pretty much make all the other girls go out to eat with us. We wanted to go to Haven so bad. We knew once they all got there they would love it.....we were totally right! The atmostsphere and conversation was so much fun....until the music began! However the night ended on a "HAPPY ENDING" once we recieved our free donuts!!! (Thanks for letting the diet coke spill on ya Cic). Thanks again for the great weekend girls! I loved chit chatting and laughing at all of the fun memories that we share! We will be talking about this weekend for years to come also!

  2. It was such a fun, fun, fun weekend! It has me reminiscing still! Remember jumping on the green bedroom bed at Grandma's and eating zotz? When we got to the sour center we would do a back flip! P.S. Michael Jackson is MY boyfriend!

  3. I know you never look at your blog but I'll text ya and tell ya that I've posted it here!!!
    Mean Green Tortilla Soup
    2 cups regular or low sodium chicken stock/broth
    2 cups water (use broth from cooked chicken if you boil it) if you dont you may need to add a couple chicken bouilon cubes
    1 bag frozen corn or 1 can corn
    1 package corn tortillas, cut into strips
    4 tablespoons extra virgin olive oil divided
    3-4 chicken breast
    1 onion, chopped
    2 cloves garlic, grated
    2 teaspoon cumin
    salt to taste
    1 jalapeño pepper, seeded and chopped
    10-12 tomatillos, husks removed
    2 cups cilantro, chopped
    Zest and juice of 2 limes
    2 cups Monterey Jack cheese, shredded
    3 avocados, chopped (optional)
    PreparationPre-heat the oven to 400°F.

    In a large pot, bring the chicken stock and water to a bubble then let simmer for about 10 minutes.

    Place the corn tortilla strips onto a baking sheet and spray them with some cooking spray. Transfer to the oven and bake until crispy, 10-20 minutes.

    Cook chicken, Once the chicken is done cooking, remove it from oven and let it rest before cutting into strips.

    Pre-heat a heavy-bottomed pot with the remaining 2 tablespoons of oil. Add the onion, garlic and cumin, and cook until soft, about 3-4 minutes. Add the corn kernels, along with the jalapeño.

    While the veggies are cooking, puree the tomatillos in a food processor until somewhat smooth. Add the purée, stock and chicken to the pot along with the veggies.

    Simmer for 10-15 minutes. Remove the soup from the heat and add in the cilantro, lime zest and juice, and serve it up garnished with a big handful of Monterey Jack cheese, tortilla strips and avocado.
    Nikki also cooks some rice to poor the soup over. I like that!!!
